Italian Classics – Pesto, Polenta and Risotto with Chef Maureen Cubbon

This hands-on class is an ode to three great Italian dishes — polenta, risotto and pesto — and the traditional way to make each. We’ll make pesto, polenta and brilliantly colored saffron risotto.
We’ll also show you how to use each recipe in multiple ways, from pesto panzanella to saffron arancini and beyond. The key to this class is technique, and you will practice the very few, but very important, steps to make each dish. There are no tricks or gimmicks in this food; just tradition.
